Salad
  • 3 cups cooked and cooled cheese tortellini
  • 1 cup sliced pepperoncini can be substituted with olives
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced red onion
  • 1 cup halved cherry tomatoes
  • 1 cup diced pepperoni, salami, or deli ham feel free to swap in vegetarian options

Preparation
  1. In a large mixing bowl, whisk together the mayonnaise, red wine vinegar, garlic powder, and sprinkle in black pepper, oregano, red pepper flakes, and kosher salt. Blend until smooth and creamy.
  2. Gently stir in the cooked and cooled cheese tortellini. Use a spatula to fold the tortellini into the dressing, ensuring each piece is coated.
  3. Fold in the sliced pepperoncini, grated Parmesan cheese, diced red onion, and halved cherry tomatoes. Mix carefully to maintain the structure of the tortellini.
  4. Gently incorporate the diced pepperoni, salami, or deli ham. Stir slowly to combine, being careful not to overmix.
  5. Cover the bowl with plastic wrap and refrigerate the salad for at least 1 hour to allow flavors to meld together.
  6. Before serving, taste the salad and adjust seasoning with extra salt, pepper, or a splash of olive oil if needed. Serve chilled.
