Ingredients
  

Base
  • 2 cups Cooked Rice or quinoa/cauliflower rice for gluten-free
Veggies
  • 1 can Hearts of Palm mimics seafood texture
  • 1 cup Shredded Carrots or bell peppers
  • 1 cup Cucumber or zucchini
  • 1 medium Avocado or omit
Sauces
  • 2 tablespoons Mayo or vegan mayo
  • 1 teaspoon Old Bay Seasoning or paprika and celery salt
  • 1 tablespoon Sriracha adjust to taste
Garnishing
  • ¼ cup Cilantro or green onions
  • 2 tablespoons Sesame Seeds optional

Method
 

Preparation
  1. Drain and chop hearts of palm into bite-sized pieces.
  2. Shred carrots and cucumbers.
  3. Slice avocado into thin wedges.
Making Fillings
  1. In a mixing bowl, combine hearts of palm, vegan mayo, Old Bay, and half of the sriracha.
  2. In another bowl, blend remaining hearts of palm with mayo, Old Bay, sesame oil, and the leftover sriracha.
Assembling the Bowl
  1. Divide cooked rice into servings.
  2. Layer with carrots, cucumber, and avocado.
  3. Spoon California-style filling on one side and spicy filling on the other.
Garnishing
  1. Sprinkle sesame seeds and cilantro on top.
  2. Drizzle additional sriracha if desired.
