Ingredients
  

For the Salad
  • 1 head Romaine Lettuce Chopped into bite-sized pieces
  • 1 bag Spring Mix or Iceberg Lettuce Torn into smaller pieces if necessary
  • 1 cup Cherry or Grape Tomatoes Halved
  • 1 medium English Cucumber Sliced
  • 1/2 medium Red Onion Thinly sliced
  • 1 cup Button Mushrooms Sliced
  • 1 cup Shredded Carrots Bright and sweet
  • 1 medium Bell Pepper Diced, mix red, yellow, and orange
For the Vinaigrette
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Honey
  • to taste Salt
  • to taste Black Pepper
Optional Toppings
  • 1/2 cup Feta Cheese Crumble on top
  • 1 cup Croutons For added crunch
  • 1/4 cup Sunflower Seeds Toasted for additional flavor
  • 1/4 cup Dried Cranberries Adds sweetness

Method
 

Preparation Steps
  1. Start by washing and drying the Romaine and spring mix or iceberg lettuce thoroughly using a salad spinner for optimal dryness.
  2. Chop the Romaine into bite-sized pieces, and tear the spring mix into smaller pieces if necessary.
  3. In a large serving bowl, layer the chopped Romaine first, followed by the spring mix or iceberg lettuce.
  4. Add halved cherry or grape tomatoes, sliced English cucumbers, thinly sliced red onion, button mushrooms, shredded carrots, and diced bell pepper.
  5. In a small mason jar or mixing bowl, combine the extra virgin olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper. Seal the jar and shake until emulsified.
  6. Cover the bowl and refrigerate if making ahead. Toss the salad with the vinaigrette right before serving.
