  • 1 small Onion green onions preferred
  • 1 cup Tofu baked or pan-crisped
  • 1 medium Avocado ripe, added near the top
For the Dressing
  • ¼ cup Vegan Cream Cheese can substitute with regular cream cheese
  • 2 tablespoons Vegan Mayo or regular mayo for non-vegan
  • 1 teaspoon Sriracha adjust to taste
  • 1 tablespoon Chili Oil can be omitted
  • 2 tablespoons Soy Sauce or tamari for gluten-free
For Garnish
  • 1 tablespoon Sesame Seeds optional nori flakes for extra flavor

Method
 

Step-by-Step Instructions
  1. Wash cucumbers and slice them thinly. Julienne the carrots and slice green onions as preferred. Prepare tofu by baking or pan-crisping for about 5-7 minutes.
  2. In a small mixing bowl, combine vegan cream cheese, vegan mayo, Sriracha, chili oil, and soy sauce. Whisk until smooth and creamy, and adjust seasoning if necessary.
  3. Layer the salad in a jar or bowl starting with cucumbers, followed by green onions, crispy tofu, edamame, julienned carrots, and avocado on top.
  4. Spoon the dressing over the layered ingredients evenly. Do not mix yet; let the dressing rest on top.
  5. Seal the jar and refrigerate it upright for up to two days to maintain integrity.
  6. Before serving, shake the jar to mix the dressing or pour into a bowl. Enjoy the layers of crunch and flavor.
