Preparation Steps
  1. In a medium bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper to create a marinade. Marinate chicken for at least 30 minutes.
  2. Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill in a bowl for tzatziki. Refrigerate to let flavors meld.
  3. Cook rice or quinoa according to package instructions. Set aside when done.
  4. Preheat air fryer to 380°F. Cook marinated chicken for 7 minutes on one side, then flip and cook for an additional 3-4 minutes until done.
  5. Let chicken rest for 5 minutes, then slice into strips.
  6. Assemble bowls with rice or quinoa, fresh vegetables, sliced chicken, and tzatziki sauce. Drizzle with olive oil and lemon juice before serving.
