For the Chicken
  • 4 pieces boneless, skinless chicken breasts
For the Marinade
  • 0.25 cup olive oil can substitute with avocado oil
  • 0.25 cup fresh lemon juice bottled juice works in a pinch
  • 3 cloves minced garlic can substitute with garlic powder (1/8 tsp per clove)
  • 2 teaspoons dried oregano can substitute with dried thyme
  • 1 teaspoon salt kosher or sea salt recommended
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon paprika can use smoked paprika for more flavor

Method
 

Preparation
  1. In a large bowl, whisk together ¼ cup olive oil, ¼ cup fresh lemon juice, 3 minced garlic cloves, 2 teaspoons dried oregano, 1 teaspoon salt, ½ teaspoon freshly ground black pepper, and 1 teaspoon paprika. Add the boneless, skinless chicken breasts, ensuring they're thoroughly coated in the marinade.
  2. Cover the marinating chicken with plastic wrap or a lid and place it in the refrigerator. Allow the chicken tenders to marinate for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Preheat your grill to medium-high heat or your oven to 400°F (200°C). If grilling, lightly oil the grill grates.
  4. Remove the chicken from the marinade and shake off any excess. Grill the chicken tenders for 6–7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  5. After cooking, transfer the chicken tenders to a plate and let them rest for about 5 minutes before serving.
